Well, It's official folk's, Summer is in fact here as of today (well, technically yesterday since it is now 1:00 a.m:).
With summer in full swing that means it is time for camping, barbecuing and just a great excuse for making a delicious meal and sitting outside with good friends, loved ones or even just enjoying some quite time by yourself. There are allot of great summer recipes and some great products out there out there for vegetarians. Here are a few of my favorite's.
Boca vegetarian Italian sausages - these are heartier than plain ol' vegetarian hot dogs they have a great Italian sausage flavor without tasting too much like the real thing. They are also a larger size so one is often plenty along side your favorite vegetarian baked beans (I like Bush's) and a tossed salad with your favorite toppings (I love craisins and toasted almonds with Amy's Goddess dressing).
Fresh Pineapple - Nothing beats the flavor of fresh pineapple hot off the grill. This is great by itself or paired with grilled chicken breast and swiss on your favorite bread or bun.
Garden Burger Black Bean Patties - You can definitely grill these, however, I find they get too dry that way so I prefer quickly heating them up with a little olive or vegetable oil in the frying pan. I then cut them in half, place on a whole wheat tortilla with a little shredded cheddar cheese, sour cream, lettuce and salsa. Yummy!
There are so many great foods out there, many of which I have yet to try, these are just a few ideas. I would love to hear everyone's thoughts, ideas and favorite grilling and summer recipes too.
Happy Summer Eating.
