Baked Polenta
This recipe is quick and easy. It pairs store bought Polenta, though you can use homemade, pasta sauce and fresh mozzarella. Serve this with a salad and you have a healthy, quick and satisfying meal in less than half an hour.
Prep time: less than five minutes
Cook Time: 15-20 minutes
Ingredients:1 18oz tube of premade polenta – or you can use homemade, cut into squares or rounds
1 cup homemade or store bought pasta sauce
8 ounces fresh mozzarella cut into enough slices to cover all the polenta
Directions:Pre-heat oven to 450. Slice polenta into ¼ to ½ rounds. Take a baking sheet and line with parchment paper, coat with vegetable oil or cooking spray. Place the rounds on the baking sheet and lightly brush each slice with olive oil. Sprinkle with salt and pepper. Bake until polenta is slightly brown around the edges about 15 minutes or less if you prefer it softer. Remove from oven. And reduce heat to 350. Top each slice with a spoonful of sauce and a slice of mozzarella. Bake another 5 minutes until cheese is melted. Serve with a salad and enjoy!
