Creamy Corn Chowder
Serves: 6
Prep Time: less than 5 minutes:
Cook Time: 15 Minutes
Ingredients:
3 tbs flour
3 tbs butter
4 cups vegetable or chicken broth + more if needed to thin out soup
1 4 oz green chile’s
2 cans whole kernel corn – (I prefer Niblet’s)
2 cans creamed corn
1 tsp oregano
1 tsp basil
1/2 cup heavy cream
Salt and pepper – to taste
Directions:
In a medium sized pot on low-med heat, melt butter and whisk in flour. Cook until light golden brown- about 2 minutes. Whisk in broth until smooth, add in corn, seasonings and green chile’s. Simmer for 10 minutes until soup is bubbling and heated through. If soup seems too thick, stir in more broth or water until it reaches desired thickness. Whisk in heavy cream, simmer another 2 minutes. Remove from heat and serve with tortilla's or quesadilla's. Enjoy!!
