Barbeque Black Beans
Prep Time: 5 minutes
Cook Time: 40-50 minutes
Ingredients:
3 cans black beans drained and rinsed
1 16 oz can tomato sauce
1 small shallot chopped or ¼ cup onion
1 Tbs honey
2 tbs molasses
¼ cup dark brown sugar (or a good sized handful)
3 dashes paprika about 1/8 tsp
Salt and pepper to taste
1 tbs white wine or apple cider vinegar
Directions:
Sauté shallot or onion until tender – about 3-4 minutes, on med-low heat. Add tomato sauce and all other ingredients except for the beans. Cover and simmer for about 10 minutes stirring frequently. Watch out this likes to splatter, so be careful when you are stirring it. Add black beans and stir until they are covered completely in sauce. Keep covered, turn to low heat, and simmer for about 30-40 minutes until beans are heated through and have soaked up the flavor of the sauce. Enjoy!!
