Basic Quinoa Recipe
These are the basic directions for cooking quinoa using the absorption method. I love to salt mine with just a teaspoon or so to just accentuate the natural flavor of the seed. From here you can flavor it however you like. You can also serve it hot or cold and along with the plethora of add-in options, the possibilities are endless. Below I have listed some of my favorite add-in options.
Ingredients:
2 cups quinoa
4 cups water
1 tsp salt
Optional - Add in suggestions:
Curry powder
Cashews, Almonds or any other nut you prefer
Fresh chopped cilantro
Red pepper flakes
Mango - cubed
Roasted vegetables such as: butternut squash, yellow squash, asparagus or beets
Vegetable or chicken broth
Fresh Basil
Chopped Tomatoes
Directions:
In a medium sized pot, add water and salt - bring to a boil. Add quinoa, reduce heat to medium-low and loosely cover with a lid. Cook until desired done-ness. About 12-15 minutes, or 10-12 if you like yours more al dente. Serve in place of rice or pasta or as a side dish.
