Green Olive and Sharp Cheddar Grilled Cheese

Grilled Cheese is one of my all-time favorite comfort foods. It is quick to make and it goes great by itself or with your favorite kind of soup. Grilled cheese is also extremely versatile. There are as many kinds of ways to make it as you can think of. A favorite of mine is to add green olives to the mix. The saltiness of the olives with the sharp flavorful bite of the cheese and the crunchy bread makes for a salty, crunchy mouthful of goodness.

Green Olive and Cheddar Grilled Cheese

2 pieces of wheat or whole grain bread

4 slices of sharp cheddar cheese

8 green olives split in half

butter or olive oil for frying

Heat your pan on medium heat. place two pieces of cheese down on bread then place the olive half's in two or three rows on top of the cheese. Top the olives with the other two pieces of cheese.
Melt about a tablespoon of butter or a small drizzle of olive oil to the pan. gently place the sandwich in the pan and rub around to get the bread saturated with the oil or butter. Fry on each side until golden brown and cheese is melted. Enjoy!!!
