2 ripe mangos cut into small pieces
2 ripe but slightly firm avocado’s cut into small pieces
Juice and Zest of 1 small lime
4 scallions/Green onions sliced
1 jalapeño finely chopped
1/3 cup cilantro chopped (about a small handful does it)
Salt and pepper to taste
Place mangos, avocado, jalapeno, cilantro and onions in a bowl and top with lime juice, zest, salt and pepper. With a large spoon or spatula gently fold the ingredients together so as not to smash the avocado or mango. This can be used right away, but is best if left to sit in the refrigerator at least 2 hours before serving. This can be served on top of sliced grilled meat (I put it on top of the cilantro chicken) and, or with chips.
