Balsamic Vinaigrette

Balsamic Vinaigrette


Makes: About 2/3 cup

1/4 cup good quality balsamic - I prefer one that has been aged for at least 5 or more years

1/4 cup good quality olive oil

fresh ground black pepper - to taste

2 tbs honey Dijon mustard (regular Dijon is fine too if you prefer)

Whisk pepper, vinegar and mustard together. Whisk in olive oil drizzling in a small stream until well blended with other ingredients. Lightly toss with 6 cups salad greens. Serve and enjoy!
