Let Summer Begin!

The first day of Summer is officially here and it is time for one of Americans favorite summer activities; camping! Over this last weekend we had a great time going on our first camp out of the year with family. It was a beautiful setting, great company and some good food!
It was also my first time going to the Boardman Marina let alone Boardman, Oregon (located in Eastern Oregon) where some of our family lives.

When we arrived at the campground/marina, the setting was perfect. The grass was green, lush and soft between our toes as the Columbia River lapped against the rocky shore nearby. The sound of children and families were playing games and the smoky and rich aroma of barbeque's lingered in the air.

These are some of the many things I look forward to in our future camping trips throughout the summer, not to mention just escaping reality for a little while and relaxing, which sadly doesn't happen often enough.

Another thing I look forward to is the food. From fresh cut water melon and coffee percolating on the fire, the inevitable mass quantity of munchies like cookies, rice crispy treats and trail mix, to  great meals like roasted chicken sausages, grilled quesadilla's and baked beans. No matter how long the camping trip is, there is always a plethora of food, and somehow even if it is something you have regularly at home, it never tastes quite the same as when your camping out in the open air, the smell of campfire seeping into your very being and everything around you. Man I wish I was camping again already...

Regardless of what you do this summer - whether you go camping, picnicking or just grilling at home, I hope you have a wonderful summer season filled with many tasty meals, memorable moments and lots of laughter throughout. And if you feel so inclined, I'd love to hear about your summer fun and food, because you better believe, I will be sharing mine with you ;)

Take care and happy summer adventures my foodie friends!
Rachel :)
