Quick Fix #3 - Cheese and Veggie Wrap

This is one of my all time favorite things to eat! It is perfect for eating on the go, packing in a lunch, or even as a meal when paired with a piece of fruit and, or a salad. Not only that, but it is super easy to make and can easily be turned into a variety of different wraps, just use your favorite veggies and cheeses and create your own wrap. I have a few other suggestions below the recipe.


Cheese and Veggie Wrap

Prep time - Less than 10 minutes

1 medium size flour tortilla (about 10 inches)

2-3 Tbs cream cheese - regular or light is fine

2 slices of cheddar cheese

½ of an avocado sliced

Small handful of sprouts

6 thin slices of cucumber

2Tbs roasted sunflower seeds

Mustard or Mayo if Desired

Directions: Spread cream cheese and mustard and mayonnaise (if desired) on tortilla. Sprinkle sunflower seeds on top of cream cheese then layer on the cheddar cheese and veggies. Roll up tortilla, tucking one end in like a burrito. Enjoy!!


Some other suggestions:
I love textures in food and seeds and nuts are a great way to add a flavorful and textural crunch. I love sunflower seeds, but shelled pumpkin seeds or soy nuts would also be great. Instead of cucumbers, another vegetable I love is Jicama. It is a Mexican vegetable often compared to a potato, but more like a lighter, crunchier and slightly sweeter version, and unlike potatoes, it actually tastes great raw. Just add a few thin slices and your good to go. If you don't like sprouts, try shredded carrots or iceberg lettuce. Really though, it is up to yo. The possibilities are endless so have fun, get creative and enjoy!
