Avocado and Egg Muffin Sandwich

Avocado and Egg Muffin Sandwich

Prep Time: 10 minutes
Servings: 1

What you need:

1 english muffin - toasted
1 large egg
1 slice of cheese (my favorites are sharp cheddar or provolone)
Salt and pepper
½ of an avocado - sliced
Mayonnaise or Butter (optional)

Directions: Take an English muffin and pop it in the toaster (wait until you get your egg frying so they are done about the same time). Take an egg and crack it in a small, preheated frying pan. Break the yolk with your spatula so it blends into the rest of the egg (or if you prefer the messier route, you can leave it sunny side up). Sprinkle it with a little salt and pepper. Depending on the size of your muffin, you might need to fold the egg over on itself a little so that it fits nicely on the muffin.

Cook egg about 1-2 minutes on one side then flip over and place the slice of cheese on top to melt while it finishes cooking. Cook another 1-2 minutes or until done. When muffin is done toasting, spread a thin layer of butter or mayonnaise (if desired) on each side of muffin. Place sliced avocado on bottom half of muffin, then place egg on top. Top with other side of muffin. Enjoy!

Yum! I always make these with Morningstar Farms veggie sausage patties, sprinkled with Canadian steak seasoning (which is really garlic-y and just makes it have that spicy sausage flavor!). I will definitely have to try adding some avocado, thanks for the great idea!
