Chipotle & Cheddar Black Beans

Ingredients:

3 cans black beans drained and rinsed
½ water
¼ tsp chipotle chili powder
4 cloves garlic chopped
A handful of cilantro chopped
½ tsp Salt – plus more to taste if needed
¼ tsp fresh ground pepper – plus more to taste if desired
½ cup sharp cheddar - shredded

Directions:

Place beans, garlic, chili powder, salt, pepper and water in a pot and set on medium - low heat. Cook for about 30 minutes on low-medium heat, stirring frequently until the beans get slightly smashed and start to break apart a little as you stir them. Mixture will become thicker and dryer the more it cooks so you will want to add more water as needed, ¼ a cup at a time depending how thick or thin you want the beans. When beans are just about done add cheese, cilantro, salt and pepper (if desired). Cook for 1-2 minutes until the cheese is melted and beans have become creamy (adding a little more water if needed). Remove from heat and serve. Note: The beans will firm up as they cool.
