Spiced Pineapple Compote

Prep time: 5 minutes or less
Cooking time: 30 minutes
1 12-16 oz bag fresh or frozen pineapple chunks, thawed – about 1½-2 cups
¼ cup brown sugar
¼ cup water
1/8 tsp ground cloves
¼ tsp cinnamon

Directions:
Add all ingredients to a small saucepan and turn on low-med heat. Simmer for 30 minutes – stirring occasionally – until fruit is tender and liquids have created a nice golden syrup. Remove from heat and let set for 5 minutes before serving over vanilla ice cream, pound cake, oatmeal or anything else you can think of. Enjoy! 

Note: If you prefer a different fruit you can use blueberries or peaches with the same ingredients above. Or, if you like strawberries, raspberries or blackberries simply use white sugar instead of brown and instead of cinnamon and cloves use 1 tbs lemon or orange juice and 1 tsp lemon or orange zest. Also, if you are using fresh fruits, reduce the cooking time by 5 minutes as the fresh fruit will cook a little quicker.
