Pepper Jack Quesadilla's




Quesadilla's are one of my favorite things to make when I am stumped on what to have for dinner because they are quick, easy to make and very tasty. They are also extremely versatile. You can use pretty much any kind of cheese and toppings your little heart desires. Add a little sour cream, salsa and fresh cilantro on top and you have just made your quesadilla "deluxe". The only difference is it didn't cost you $8.00 dollars like it would've if you ordered it in a restaurant. Serve these alone, or if you are really hungry, with my roasted pepper and corn soup - which I highly recommend!




Prep Time: 5 minutes
Cook Time: 10 minutes
Serves: 2

Ingredients:
4 slices of pepper jack cheese or ½ cup shredded
1/2 can of vegetarian re-fried beans – about ½ cup
2 tortillas
Hot sauce - if desired

Directions:
Preheat Oven to 375. Take desired amount of bean and spread evenly over tortilla leaving about a half an inch of space from the edge of the tortilla. Sprinkle hot sauce over beans (if desired) then top with cheese. Place tortilla’s on top of a oil coated baking sheet and bake for 10 minutes or until cheese is golden and bubbly. Remove from oven. With a pair of tong fold the tortilla’s in half. Cut in half with a pizza cutter or a sharp knife before serving. Enjoy!
