Curry Chicken Salad




When I eat chicken, one of my favorite ways is in a good chicken salad. I prefer to use fresh cooked chicken breast, but when I am in a hurry, I like to use canned chicken breast. The problem with this is, it tends to have that processed flavor. However, by adding just a few extra ingredients, you can spruce it up and make it taste fresh and flavorful.

Prep Time: 10 minutes

Makes: 2 cups

Ingredients:

2 cans chunk chicken breast - drained

1/3 cup mayonnaise

1/4 cup chopped cashews

Juice of half a small lemon

1 stalk of celery cut in half lengthwise and thinly sliced

1 tbs curry powder

1/2 tsp coriander

salt and pepper to taste

1 heaping tbs chopped cilantro or mint

Directions:
In a large bowl blend together chicken breast and all ingredients except for cashews until well incorporated. Season with salt and pepper to taste cover and let chill for at least half an hour to allow flavor to mingle. When ready to serve add in cashews and mix again. Salad can be eaten right away, but it will taste even better if you allow it to sit a little bit. Spread on your favorite bread and top with lettuce, eat plain or spread on chips or crackers. Any ways you eat it, it's pretty darn tasty! Enjoy :)
